Thai roasted chilli jam is a popular condiment in Thai cuisine, loved for its sweet, salty, and spicy flavours. I often use it in my Thai dishes, including tom yum, stir-fries, and fried rice. Similarly, Chinese chilli crisp is made with chilli peppers and seasonings, but with a different texture and ingredients. I created a vegan cacao chili crisp, which is spicier than usual, adapting from Rachael Khoo's recipe.
