Khao Ob Sabparod or “baked pineapple fried rice” is a popular dish amongst kids and adults. There are a few stories about how the dish was created. But the main story is that the dish was influenced by Chinese cuisines and has been around for less than a century. The original recipe uses prawn as the main ingredient.

For the recipe, some people just make the dish and serve it, however, the “cooler” way is to transfer the fried rice into a pineapple shell and to bake for a few minutes. The latter method helps enhance the fruity aroma in the rice.

My recipe for baked pineapple fried with rice with cashew nuts uses chicken, however you can sub it out with fresh prawns if you’d prefer (or small prawns.) Cashew nuts add a crunchy and creamy profile to the already sweet and sour fried rice. If you want to increase the heat, serve it with chilli fish sauce or nam pla prik.
